As promised: Corn Dog Casserole
2 boxes Jiffy Corn Bread Mix
2/3 Cup Milk
8 oz shredded sharp cheddar cheese
2 packages hot dogs
Preheat oven to 400 degrees. Grease a 9 x 13 baking dish. Prepare cornbread mix per box directions. Cut each hot dog into 6-8 pieces. Add hot dogs and cheese to cornbread mix. Pour mixture into greased baking dish. Bake, covered with aluminum foil for 20-25 minutes, then remove foil for an additional 5-10 minutes of baking.
Serve plain, or buried under a ladle full of Hell Hound Chili*.
Notes: My kids love this! Though I use cheddar cheese, you can use other cheeses as well. Pepper jack springs to mind as an obvious replacement, or you could add a small can of diced peppers to the cornbread mix, but drain the liquid first.
